How did you get started?

Thor started making lefse 8 years after his Grandpa Ed (the original family lefse maker) passed away. Something was missing from our holiday dinners. It was the homemade lefse. We have been making lefse for 8 years. Of course, Thor made it as a young boy with his grandparents. He still uses the lefse grill his grandparents used over 40 years ago!

Who inspired you?

Thor’s Grandma and Grandpa Erickson. It’s a common bond between the past and present that much of his family uses to recall fond memories of holidays past.

What is your favorite part of what you do?

One our favorite things about making lefse is the memories that many people have relating to lefse. Memories of loved ones. Memories of making it in the kitchen with family. Memories that connect people to a happy time in their life. We enjoy hearing about the memories and connections that people have relating to lefse. 

What is the least favorite part of your maker process?

Our least favorite part is when we run out of lefse and have to make a late night batch.

What does a day in your life look like?

6am – mix up the potato mixture and chill.

7am – add flour to potato mixture and roll into lefse balls.

8 am – roll and grill lefse

10 am – 96 rounds of lefse are rolled, grilled and are now cooling

10 am – repeat

2 pm – another 96 rounds complete

4 - 5 pm:  package first batch of lefse

8 – 9pm:  package second batch of lefse

What do you enjoy doing when you are not busy making?

We enjoy spending time outside. We enjoy spending time with our 3 kids who keep us busy with their extra-curricular activities.
